The dish also has differed names such as helva, chalwa, halua and so on. Also, there are more than 20 types of halwa recipes that you can try using different halwa ingredients. From sooji ka halwa and badam ka halwa to moong dal sheera and walnut halwa, the list of different types of halwa is long and tempting. 1. Sooji Ka Halwa
Also known as sooji ka sheera, this halwa recipe is prepared by toasting semolina in a fat like ghee or oil and then adding a sweetener like sugar syrup or honey. Sooji ka halwa is the most common halwa recipe you would find in India. It is mainly prepared during the famous Navratri festival for Kanjak poojan. People serve it along with dry kala chana and pooris. So, if you want to take this lip-smacking halwa recipe, get ready to learn it. Here is how to make halwa with sooji:
• Take a pan and add sugar, water and milk in it. Heat the mixture on a medium flame. However, do not boil it but just heat enough so that the sugar gets dissolved.
• When the sugar-milk heats up, take another pan on a medium heat. Add ghee into it. When the ghee melts down, add sooji to the pan. Simultaneously add broken cashew and stir.
• Roast the sooji while continuously stirring. Also, add cardamom powder and keep stirring.
• This should be done till the sooji's fragrance is there and the sooji's colour changes to light brown. Here you can roast the sooji as per your preferences. For a darker halwa, roast for longer time.
• Now, add the heated milk-sugar-water mixture into this pan. Whisk well as you add the mixture.
• Try to add the mixture in 2-3 parts while whishing continuously with one hand.
• Slowly, the sooji will start absorbing the liquid and thicken up
• Stir for around 2-3 minutes.
• Garnish it with cashew and other dry fruits and serve!
2. Gajar ka Halwa
Missing gajar ka halwa in this list is no less than a sin. And we are not ready for that. This traditional carrot or gajar ka halwa is made with full-fat milk or khoya. The dish comes from Punjab and is usually made during the winter season. This tasty halwa recipe is also very easy and can take somewhere around 45 minutes. But you can keep it refrigerated and enjoy for 2-3 days. Here is the halwa recipe:
• Take a heavy bottom vessel or kadai. Heat ghee in it.
• Now, add grated carrots in the ghee. Saut carrots while stirring often. Cook this for about 15-20 minutes until the carrots turn tender.
• Now add crumbled or grated khoya. It is also known as mawa or evaporized milk solids.
• Mix both the ingredients very well and add sugar into it. Mix and combine again.
• When both khoya and sugar are melted, add cashews, golden raisins, pistachios, and cardamom powder.
• Mix the ingredients again and cook the gajar halwa on a low flame.
• Gradually the halwa will become thick and leaves the edges of the pan.
• Your halwa is ready. Serve it warm or chilled.
3. Moong Dal Halwa
You must have tasted moong dal halwa in a celebratory occasion like Holi, Diwali or a marriage. It is also best enjoyed during the winter season. The halwa is quite tasty but it takes a lot of time and effort to make this halwa recipe. Below is a step by step guide on how to make halwa with moong dal:
• The first step of this halwa recipe begins a night before. You need to soak moong dal in water overnight or for at least 4-5 hours. Then, drain and grind the dal into a smooth paste.
• Heat ghee in a non-stick pan and add the smooth paste of moong dal in it.
• Keep stirring and saute the halwa until the smell of moong completely goes away. This step will take plenty of time. So, keep patience and keep stirring. The halwa will first look pasty and then it will become lumpy. Slowly, the lumps will break down and the fat will start releasing from the sides.
• Now while the halwa is cooking, add milk, water and sugar in a kadhai. Heat this mixture on a low or medium flame till it comes to a boil.
• Add this hot milk mixture in the moong dal mixture when it reaches the granular consistency.
• The colour of the halwa will also become light golden. This is when you have to add the milk mixture into the fried moong dal.
• The mixture will sizzle a lot when you add the liquid. So, be careful and keep stirring the halwa.
• Simmer the flame. The moong dal will absorb the liquid and the ghee will get separated.
• Finally add add cardamom powder, chopped pistachios and raisins.
• Your moong dal ka halwa is ready. Serve it hot.
4. Jackfruit Halwa
This one is a different halwa recipe and made with jackfruits. These fruits have bulb-like pods inside which, when the fruit gets ripened, tasty sweet and are fleshy. For this halwa recipe, you need these ripe pods of jackfruit. Let us see how to make this halwa:
1. Take a plate and grease it generously with ghee. Keep the plate aside.
2. Grind the ripe jack fruit flesh from the pods and get a smooth pulp.
3. In a non-stick pan, add the pulp and heat it on a very low flame.
4. Keep cooking till the pulp starts boiling.
5. Now, add jaggery powder into the pulp and continue stir-cooking. You can also add ghee in intervals.
6. Time to add cardamom powder.
7. Cook the halwa till it become thick and starts to leave the bottom and side. This whole cooking process may take around 30 minutes.
8. Transfer the jackfruit halwa on the greased plate. Gently pat it with greased finger. You will get a smooth surface.
9. Garnish the halwa with roasted cashews and nuts.
10. Let the halwa cool down completely.
11. Cut the halwa into desired pieces and serve cold.
